Amaranth appears in different species and can be divided into 3 different categories: pseudo-grain, vegetable, or ornamental. Some species are edible and the differences are more or less cultural preferences. They are all very nutritious. The species eaten as vegetables taste somewhat like spinach. The species whose seeds are eaten are pseudo-cereals. The seeds are ground into flour or eaten as quinoa with a similar protein kick.

Amaranth is also roasted just like corn, resulting in a kind of mini popcorn. Keep a lid on the pan because puffed Amaranth shoots out in all directions. If you make flour from the seeds, it can be used for baking (bread, biscuits, etc) or as a thickener for soups and sauces. The flakes can be made into porridge.
