Organic coarse bulgur: the grain with bite
This organic grain product is made from pre-steamed, dried and coarsely milled durum wheat from Turkey. The larger grains give more bite than medium or fine bulgur and retain their structure better during cooking. For that reason this variant is often used for warm dishes in which the grains absorb broth or sauce without becoming soft or mushy.
This organic bulgur is grown and processed in Turkey and is organically certified. Per 100 grams the product contains 12 grams of protein and 13 grams of fiber. Because of the firm grain it is suitable for both home use and professional kitchens.
What do you use coarse bulgur for?
Coarse bulgur really comes into its own in dishes where texture and a firm bite are important. It is a well-known substitute for rice and couscous. It is especially suitable for recipes in which the grains need to absorb moisture while remaining distinguishable. That makes this variant a good choice for dishes that simmer for a long time.
-
Pilav: absorbs broth and spices well, yet stays loose and grainy.
-
Kibbeh: works as a binder and gives the mixture more structure.
-
Spiced stews: retains its shape during longer cooking.
-
Soups: adds substance without falling apart quickly.
-
Taboulé: gives the dish a firm, recognizable bite.
For taboulé you can soak the bulgur and then mix it with parsley, tomato, lemon juice and olive oil.
Preparing coarse bulgur
Soaking, recommended: put 150 grams of coarse bulgur in a bowl and add 3 deciliters of boiling water. Stir once, cover the bowl and let it soak for 15 to 20 minutes. During soaking the grains gradually absorb the water, making them firm and separate. Drain excess liquid or squeeze gently. This method is suitable for, among other things, pilav and taboulé.
Cooking: cook the coarse bulgur for 10 to 12 minutes in about twice as much water. Then remove the pan from the heat and let it rest for another 5 minutes with the lid closed. Fluff the grains with a fork before serving.
