History and Origins of Cacao
Cacao (Theobroma) was first harvested by the Olmecs in Mexico as early as 1000 B.C. At that time it was mainly used for fortifying drinks. Over the years, the Mayas and the Aztecs adopted this use in their cultures. Cocoa became part of ceremonial rituals and cocoa beans were a means of payment. In the 16th century, the Spanish brought cocoa to Europe.
In the mid-17th century, it became a popular drink. Cocoa trees were introduced to Asia and West Africa through colonies of various European countries, as there was a rising demand for chocolate in Europe.
The cocoa bean is the raw material used in the production of chocolate. These cocoa beans originate from the tropical climates of South America. The Theobroma cacao tree is sacred to the Mayans and Aztecs. The cacao beans from the tree are harvested by hand and the raw beans are then cleaned in natural water and selected for the best quality. This process ensures that the nutritional values are retained, without any additives.
Our Raw Cacao Pasta comes from the Ucayali region of Peru. The cocoa is harvested there by smallholders with whom we work in the Ucayali region in the Peruvian jungle. There, a sustainable production team provides free technical assistance to farmers to improve their yield per hectare, follow organic farming principles and give farmers the general guidance they need. The team also provides logistical support by collecting the product from the farmers, who are often in very remote areas, and sending it to our production facility.
Cocoa paste
Cocoa trees produce pods, these pods contain 20 to 40 beans. The cocoa beans are fermented using a special process that prevents the temperature from exceeding 40 degrees during fermentation. Then the cacao beans are dried in the sun until there is only 3% moisture left in the beans. Finally, the beans are peeled and shredded and then cocoa nibs, cocoa paste, cocoa butter or cocoa powder are made from them.

Cocoa Paste Blocks
Cocoa paste blocks are used to make chocolate. The 5 kg cocoa paste is a sheet that is easy to break and the 20 kg is a large block. The 20 kg is very suitable for industrial use for melting and the 5 kg plate is for example easy to break into small pieces for selling.
