Cinnamon is a spice made from the inner bark of the shoots of the cinnamon tree. There are many varieties of cinnamon. The best known varieties are ceylon cinnamon and cassia cinnamon. Of these, cassia cinnamon is more burning and sweeter than ceylon cinnamon.

Taste and use

Cassia cinnamon, also called true cinnamon, has a deep red colour and a sharp and bitter taste. It combines well with sweet and savoury dishes. The cinnamon can be used in coffee, smoothies, bakery products, applesauce or stewed pears, but also in sauces and marinades.
