What is fonio?
Fonio is a type of grain often regarded as the oldest authentic African grain. This grain grows in dry areas at the edge of the Sahara, where it does well on poor sandy soil with little water. Unlike some other grains, fonio grows where fertile soil is scarce, which makes it suitable for sustainable cultivation and can help counteract desertification and erosion.
Characteristics of African grain
The grains are small and light in color and are dried and processed after harvest. The appearance and texture resemble fine couscous. Besides the white variety there is also black fonio, but this variety is less commonly cultivated. In the European market fonio is increasingly seen as an interesting variation on other grains such as rice or quinoa.
Use and applications of cooked fonio
The uses of fonio are broad. Because of the short cooking time and simple preparation it is quick to make. Cooked fonio has a soft, airy texture and a mildly nutty flavor.

What fonio contains nutritionally
Fonio does not contain gluten. It also contains carbohydrates, proteins and fiber.
Per 100 g, fonio contains minerals and nutrients such as iron, zinc, copper, magnesium, phosphorus and protein.
The nutritional profile of fonio is often compared with other grains, and it is noted for containing certain essential amino acids that are less common in, for example, wheat. For that reason fonio is regarded as a versatile grain for various products and applications.
