Origin Juniper
Juniper (Juniperus Communis) is a conifer from the cypress family. It occurs naturally in the Benelux and in the Netherlands can be found mainly in the Veluwe. The name Juniperus is derived from a Celtic word that means prickly. Juniperus is a thorny bush. Communis means 'common' in Latin.
The juniper played a role in prehistory. The pollen of the berries has been found in soil layers around the year 13,500 - 12,100 BC. The berries and seeds have been found in cesspools and this indicates the use of the berries as a spice.
Use of juniper granules
Juniper berries have a spicy, bittersweet taste. Because the taste of juniper berries develops slowly, they need to be cooked for a long time. These juniper berries have been ground into granules, which reduces the time it takes for the flavour to be released. The granulate is rich in many vitamins (vitamin B1, vitamin B2, vitamin B3 and vitamin C), minerals (calcium, potassium, magnesium, zinc, iron and sodium) and antioxidants.
The granulate of this berry-like cone fruit can be used in many ways. For instance, the granules can be used to flavour different drinks such as gin and ginseng. Besides being used in drinks, juniper berries are excellent in winter dishes! Traditionally, they are used to season sauerkraut and game, in marinades and in sauces and ragout.
