Origin Lemon myrtle
Lemon myrtle is a plant that grows wild in the Australian rain forests and flowers from summer to autumn. It belongs to the family Myrtaceae. The plant itself can grow up to 6 metres long and has beautiful white flowers in addition to its green leaves.
Lemon myrtle is also called the queen among lemon herbs. It belongs to the herbs because it is mainly the leaves of the plant that are used for flavour and not the berries. The leaves of the plant smell strongly of lemon and that is because they contain citral.

Besides containing mainly citral, the leaves of the lemon myrtle are also rich in vitamins (vitamin A and vitamin E) and minerals (calcium, zinc and magnesium).
What can I use Lemon Myrtle for?
Lemon myrtle gives off a wonderful lemon fragrance. It also has a delightful flavour similar to a mixture of lemon, lime and lemongrass. It is a good alternative to using normal lemon in cooking. Where normal lemon can sometimes cause milk to separate, lemon myrtle does not.
As a spice it is often used for ice cream, sorbets and biscuits. But it is also delicious to add to spice mixtures for meat and fish. You can also add it to, for example, pasta to create a fresh taste. And don't forget to make some delicious tea!
Be careful; if you cook for a long time, the flavour may lean towards eucalyptus or become too strong.
